Initially focused on providing a contemporary spin on classic culinary favorites, Food 101 has evolved during the past decade to focus on farm-to-table, cutting edge Southern Cuisine, while also featuring several of those long-time favorites.
During the past ten years, the chefs at Food 101 have excelled at featuring a bounty of local ingredients prepared with a bold Southern flair that provides a deliciously satisfying dining experience. Founded by childhood friends looking to bring a gathering place to Atlanta, Steve Buero, Chris Segal, Mark Stillman, Phil Roness opened Food 101 in 1999. Throughout the past decade their essential goal has always been to provide a fine dining restaurant where friends and family can gather in a comfortable setting while enjoying exceptional cuisine.
With their engaging personalities, the owners, who are constantly present at Food 101, have a special gift for making each guest feel like they are being welcomed into their home.
FOOD 101 SHRIMP AND GRITS
SHRIMP
2 TBS Butter
Shrimp (preferably at least 16-20’s) (estimate pieces per person)
1 link Andouille Sausage-slice or dice
6-8 Spears Okra
½ Yellow Onion
4 Cloves Garlic
½ Can Diced Tomato
¼ cup White Wine
2 Cups Seafood Stock (Or Clam Juice)
1 TBS Old Bay Seasoning
Flat Leaf Parsley (garnish)
· In a Sautee Pan with steep sides, sauté onion & garlic in 2 tbs of butter. Add Shrimp & toss/stir.
· Deglaze with white wine. Then Add Sausage, Tomato & Seafood Stock
· Season with Old Bay, Salt & Pepper. Cook until shrimp are done and sauce is slightly reduced
· Spoon over grits & Garnish With Parsley
GRITS
1 Cup Stone Ground Grits
2 Cups Half & Half
2 Cups Chicken Stock
1 Stick Butter
S&P
· In a medium sauce pot, Bring Half & Half, Chicken stock, & butter to a strong simmer
· Slowly Whisk in grits. Whisk occasionally so as not to stick to bottom or form clumps. Cook 45 min-1 hour
· Season with salt & pepper. Thin with extra cream or stock if necessary
